Ingredients

  • 1 pound salmon fillet, cut into cubes
  • 1 leek, diced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound dry pasta of your choice

Directions

  1. In a large skillet over medium-high heat, heat the olive oil. Add the salmon cubes and leek and cook for 5 minutes, stirring occasionally.
  2. Add the garlic and cook for an additional minute.
  3. Pour in the cream, white wine, and lemon juice. Season with salt and pepper.
  4. Bring the sauce to a simmer and reduce heat to low. Simmer for 10 minutes, stirring occasionally.
  5. Meanwhile, cook the pasta according to package directions.
  6. Drain the pasta and add it to the sauce. Cook for an additional 5 minutes, stirring occasionally.
  7. Serve the creamy salmon and leek pasta hot.
