Ingredients
- 2 lbs chicken (bone-in, skin-on)
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon ground ginger
- 2 tablespoons tamarind paste
- 1 can (14 oz) coconut milk
- 1/2 cup water
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 1/2 teaspoon salt
- 2 tablespoons chopped fresh cilantro, for garnish
Directions
- Heat the oil in a large pot over medium-high heat.
- Add the onion and garlic and cook for 2 minutes, stirring occasionally.
- Add the coriander, cumin, turmeric, and ginger and cook for 1 minute, stirring constantly.
- Add the chicken and cook for 5 minutes, stirring occasionally.
- Add the tamarind paste, coconut milk, water, fish sauce, brown sugar, and salt and bring to a boil.
- Reduce the heat to low, cover, and simmer for 25 minutes, stirring occasionally.
- Garnish with cilantro and serve.
