Ingredients
2 lbs chicken (bone-in, skin-on)
2 tablespoons vegetable oil
1 large onion, chopped
4 cloves garlic, minced
1 teaspoon ground coriander

2 tablespoons tamarind paste

Directions
Heat the oil in a large pot over medium-high heat.
Add the onion and garlic and cook for 2 minutes, stirring occasionally.
Add the coriander, cumin, turmeric, and ginger and cook for 1 minute, stirring constantly.
Add the chicken and cook for 5 minutes, stirring occasionally.
Add the tamarind paste, coconut milk, water, fish sauce, brown sugar, and salt and bring to a boil.
Reduce the heat to low, cover, and simmer for 25 minutes, stirring occasionally.
Garnish with cilantro and serve.
