Ingredients

  • 2 lbs chicken (bone-in, skin-on)
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • 2 tablespoons tamarind paste
  • 1 can (14 oz) coconut milk
  • 1/2 cup water
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 2 tablespoons chopped fresh cilantro, for garnish

Directions

  1. Heat the oil in a large pot over medium-high heat.
  2. Add the onion and garlic and cook for 2 minutes, stirring occasionally.
  3. Add the coriander, cumin, turmeric, and ginger and cook for 1 minute, stirring constantly.
  4. Add the chicken and cook for 5 minutes, stirring occasionally.
  5. Add the tamarind paste, coconut milk, water, fish sauce, brown sugar, and salt and bring to a boil.
  6. Reduce the heat to low, cover, and simmer for 25 minutes, stirring occasionally.
  7. Garnish with cilantro and serve.
