Ingredients
- 4 lb pork butt roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 2 cloves garlic, minced
- 1 onion, chopped
- 3 carrots, chopped
- 3 potatoes, chopped
- 1/2 cup chicken broth
Directions
- Preheat oven to 350°F.
- In a large skillet, heat olive oil over medium heat. Add pork roast and cook for about 5 minutes per side, or until browned.
- In a small bowl, combine salt, pepper, oregano, and garlic. Rub the mixture onto the roast.
- Transfer the roast to a roasting pan. Add the onion, carrots, potatoes, and chicken broth to the pan.
- Cover the pan with foil and bake for 1½ hours, or until the pork is cooked through and the vegetables are tender.
- Serve hot.
