Ingredients
4 lb pork butt roast
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried oregano
2 cloves garlic, minced
1 onion, chopped
3 carrots, chopped
3 potatoes, chopped
1/2 cup chicken broth
Directions
Preheat oven to 350°F.
In a large skillet, heat olive oil over medium heat. Add pork roast and cook for about 5 minutes per side, or until browned.
In a small bowl, combine salt, pepper, oregano, and garlic. Rub the mixture onto the roast.
Transfer the roast to a roasting pan. Add the onion, carrots, potatoes, and chicken broth to the pan.
Cover the pan with foil and bake for 1½ hours, or until the pork is cooked through and the vegetables are tender.
Serve hot.
