Ingredients

  • 4 lb pork butt roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 potatoes, chopped
  • 1/2 cup chicken broth

Directions

  1. Preheat oven to 350°F.
  2. In a large skillet, heat olive oil over medium heat. Add pork roast and cook for about 5 minutes per side, or until browned.
  3. In a small bowl, combine salt, pepper, oregano, and garlic. Rub the mixture onto the roast.
  4. Transfer the roast to a roasting pan. Add the onion, carrots, potatoes, and chicken broth to the pan.
  5. Cover the pan with foil and bake for 1½ hours, or until the pork is cooked through and the vegetables are tender.
  6. Serve hot.
