Ingredients

  • 1 lb fresh mahi mahi fillets
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1/4 cup sliced jalapenos (optional)
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tbsp freshly squeezed lime juice
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste

Directions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together paprika, cumin, garlic powder, salt, and black pepper to create a spice rub.
  3. Pat dry the mahi mahi fillets with a paper towel, then rub the spice mixture onto both sides of the fillets.
