- 1 pound dried black beans
- 1 pound smoked pork shoulder
- 1 pound fresh pork shoulder
- 1/2 pound smoked sausage (linguiça)
- 1/2 pound bacon, chopped
- 4 cloves garlic, minced
- 1 large onion, chopped
- 2 bay leaves
- 1 tablespoon olive oil
- 1 orange, sliced
Directions
- Rinse the black beans and soak them overnight in water.
- In a large pot, combine the soaked beans and enough water to cover them. Bring to a boil and cook for about 1 hour or until the beans are tender. Drain and set aside.
- In a separate pot, cook the smoked pork shoulder, fresh pork shoulder, and sausage in water for about 1 hour or until they are cooked through. Remove the meats from the pot and set them aside.
- In a large skillet, cook the chopped bacon until crispy. Remove the bacon from the skillet and set it aside.
- Using the same skillet, sauté the minced garlic and chopped onion in olive oil until they are translucent.
