Ingredients

  • 1 pound dried black beans
  • 1 pound smoked pork shoulder
  • 1 pound fresh pork shoulder
  • 1/2 pound smoked sausage (linguiça)
  • 1/2 pound bacon, chopped
  • 4 cloves garlic, minced
  • 1 large onion, chopped
  • 2 bay leaves
  • 1 tablespoon olive oil
  • 1 orange, sliced

Directions

  1. Rinse the black beans and soak them overnight in water.
  2. In a large pot, combine the soaked beans and enough water to cover them. Bring to a boil and cook for about 1 hour or until the beans are tender. Drain and set aside.
  3. In a separate pot, cook the smoked pork shoulder, fresh pork shoulder, and sausage in water for about 1 hour or until they are cooked through. Remove the meats from the pot and set them aside.
  4. In a large skillet, cook the chopped bacon until crispy. Remove the bacon from the skillet and set it aside.
  5. Using the same skillet, sauté the minced garlic and chopped onion in olive oil until they are translucent.
  6. In a large pot, combine the cooked beans, meats, sautéed garlic and onion, bay leaves, and enough water to cover everything. Bring to a boil and let it simmer for about 1 hour.
  7. Remove the bay leaves before serving.
  8. Serve the Feijoada hot with white rice, collard greens, and a slice of orange.
