Ingredients
- 4 large sweet potatoes
- 2 ripe avocados
- 1 small red onion, finely diced
- 1 small tomato, diced
- 1 jalapeno, seeded and diced
- Juice of 1 lime
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Directions
- Preheat the oven to 400°F (200°C).
- Scrub the sweet potatoes and pat them dry. Place them on a baking sheet and bake for 40-45 minutes, or until tender.
- While the sweet potatoes are baking, prepare the guacamole mixture. In a bowl, mash the avocados until smooth.
- Add the red onion, tomato, jalapeno, lime juice, cilantro, salt, and pepper to the mashed avocados. Stir well to combine all the ingredients.
- Once the sweet potatoes are done, remove them from the oven and let cool slightly.
- Cut a slit lengthwise on the top of each sweet potato and gently squeeze the ends to create an opening. Use a fork to slightly mash the inside of the sweet potatoes, creating a pocket for the guacamole.
