Ingredients

  • 1 pound chicken livers, trimmed and cleaned
  • 1 cup unsalted butter, divided
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup brandy
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh parsley, for garnish

Directions

  1. In a large skillet, melt 1/4 cup of butter over medium heat.
  2. Add the chopped onion and garlic, and sauté until they are soft and translucent.
  3. Add the chicken livers to the skillet and cook until they are no longer pink in the center, about 5-7 minutes.
  4. Transfer the cooked livers, onions, and garlic to a food processor.
  5. Add the thyme, salt, black pepper, and nutmeg to the food processor.
  6. Pulse the mixture until smooth.
  7. In the same skillet, melt another 1/4 cup of butter over medium heat.
  8. Pour in the brandy and cook for 1 minute to burn off the alcohol.
  9. Add the heavy cream to the skillet and stir until heated through.
  10. Pour the cream mixture into the food processor with the liver mixture and blend until well combined.
  11. While the food processor is running, add the remaining 1/2 cup of butter in small pieces, allowing each piece to incorporate before adding the next.
  12. Continue blending until the pate is smooth and creamy.
  13. Transfer the pate to a serving dish or individual ramekins.
  14. Cover with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld.
  15. Before serving, garnish with chopped fresh parsley.
  16. Serve chilled with crusty bread or crackers.
