Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a medium bowl, cream together the butter, granulated sugar and light brown sugar until light and fluffy. Add the egg and vanilla extract and mix until smooth.
In a separate bowl, whisk together the flour, baking soda, 1 teaspoon of cinnamon and salt. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
In a small bowl, whisk together the remaining 1/4 cup of granulated sugar and 2 teaspoons of cinnamon. Roll the cookie dough into 1-inch balls and roll them in the cinnamon-sugar mixture. Place the cookie dough balls on the prepared baking sheet, about 2 inches apart.
Bake the cookies for 8-10 minutes or until the edges are lightly golden brown. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
