Ingredients

  • 1/2 cup butter, softened (1 stick)
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon

Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, cream together the butter, granulated sugar and light brown sugar until light and fluffy. Add the egg and vanilla extract and mix until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, 1 teaspoon of cinnamon and salt. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  4. In a small bowl, whisk together the remaining 1/4 cup of granulated sugar and 2 teaspoons of cinnamon. Roll the cookie dough into 1-inch balls and roll them in the cinnamon-sugar mixture. Place the cookie dough balls on the prepared baking sheet, about 2 inches apart.
  5. Bake the cookies for 8-10 minutes or until the edges are lightly golden brown. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
