Ingredients
1 cup cornmeal
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda

Directions
Preheat oven to 400°F (200°C). Grease or line 12 muffin cups with paper liners.

In a medium bowl, whisk together butter, sugar, milk, and egg.
Pour the wet ingredients into the dry ingredients, and stir until just combined.
Divide the batter evenly among the muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
