Ingredients

  • 4 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 3 cups vegetable broth
  • 2 (14.5 ounce) cans diced tomatoes
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook for 5 minutes, stirring occasionally.
  2. Add the garlic and cook for 1 minute.
  3. Stir in the tomato paste and cook for 1 minute.
  4. Add the vegetable broth, diced tomatoes, parsley, and thyme. Bring the mixture to a boil, reduce the heat to low, and simmer for 25 minutes.
  5. Season with salt and pepper, to taste. Serve warm.
