Eggs Poached in Tomato Sauce
Ingredients
2 cups all-purpose flour
3/4 cup granulated sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegetable oil
1/2 cup buttermilk
1/2 cup warm water
1 egg, lightly beaten
1 teaspoon vanilla extract
2 tablespoons ground cinnamon
1/4 cup chopped walnuts (optional)
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
In a medium bowl, mix together flour, sugar, baking soda, and salt.
In a separate bowl, mix together oil, buttermilk, water, egg, and vanilla. Add the wet ingredients to the dry ingredients and mix until just combined.
Stir in the ground cinnamon and walnuts (if using). Pour into the prepared loaf pan.
Bake for 35 to 40 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Cool for 10 minutes before removing from the pan. Allow to cool completely before slicing.
