Ingredients

  • 1 cup uncooked brown rice
  • 1 teaspoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup frozen corn
  • 2 cups water

Directions

  1. In a medium-sized pot, heat the olive oil over medium heat.
  2. Add the chili powder, garlic powder, cumin, smoked paprika, onion powder, black pepper, and salt.
  3. Stir the spices around for a few seconds until fragrant.
  4. Add the brown rice and stir to coat the rice with the spices.
  5. Add the frozen corn and stir again.
  6. Pour in the two cups of water and bring to a boil.
  7. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  8. Remove the pot from the heat and let sit for 5 minutes before serving.
