Ingredients

  • 2 cans cannellini beans, drained and rinsed
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup freshly squeezed lime juice

Directions

  1. In a medium saucepan, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  2. Add the beans, parsley, cilantro, cumin, oregano, salt, and pepper and cook, stirring, until the beans are heated through, about 5 minutes.
  3. Transfer the bean mixture to a food processor or blender and puree until smooth.
  4. Return the bean puree to the saucepan and stir in the lime juice. Cook over low heat until heated through.
  5. Serve hot as a side dish or as a main course with additional toppings of your choice.
