Ingredients
- 2 cans cannellini beans, drained and rinsed
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup freshly squeezed lime juice
Directions
- In a medium saucepan, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the beans, parsley, cilantro, cumin, oregano, salt, and pepper and cook, stirring, until the beans are heated through, about 5 minutes.
- Transfer the bean mixture to a food processor or blender and puree until smooth.
- Return the bean puree to the saucepan and stir in the lime juice. Cook over low heat until heated through.
- Serve hot as a side dish or as a main course with additional toppings of your choice.
