Ingredients

  • 1 Partridge Ruffed Grouse
  • 1/4 cup of olive oil
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of sea salt
  • 1/2 teaspoon of freshly ground black pepper
  • 1 tablespoon of fresh thyme leaves, chopped
  • 1/4 cup of white wine
  • 1/2 cup of chicken broth
  • 1/4 cup of heavy cream
  • 1 tablespoon of butter
  • 1/4 cup of fresh parsley, chopped

Directions

  1. Preheat your oven to 375°F
  2. In a large oven-proof skillet, heat the olive oil over medium heat
  3. Season the Grouse with the garlic, salt, and pepper
  4. Add the Grouse to the skillet, and cook until lightly browned on both sides, about 4 minutes per side
  5. Add the thyme and white wine, and bring to a simmer
  6. Add the chicken broth, and bring to a simmer
  7. Transfer the skillet to the preheated oven, and bake for 25 minutes
  8. Remove the skillet from the oven, and transfer the Grouse to a plate to rest
  9. Add the cream, butter, and parsley to the skillet and stir to combine
  10. Pour sauce over the Grouse, and serve immediately
