Ingredients
- 1 Partridge Ruffed Grouse
- 1/4 cup of olive oil
- 2 cloves of garlic, minced
- 1/2 teaspoon of sea salt
- 1/2 teaspoon of freshly ground black pepper
- 1 tablespoon of fresh thyme leaves, chopped
- 1/4 cup of white wine
- 1/2 cup of chicken broth
- 1/4 cup of heavy cream
- 1 tablespoon of butter
- 1/4 cup of fresh parsley, chopped
Directions
- Preheat your oven to 375°F
- In a large oven-proof skillet, heat the olive oil over medium heat
- Season the Grouse with the garlic, salt, and pepper
- Add the Grouse to the skillet, and cook until lightly browned on both sides, about 4 minutes per side
- Add the thyme and white wine, and bring to a simmer
- Add the chicken broth, and bring to a simmer
- Transfer the skillet to the preheated oven, and bake for 25 minutes
- Remove the skillet from the oven, and transfer the Grouse to a plate to rest
- Add the cream, butter, and parsley to the skillet and stir to combine
- Pour sauce over the Grouse, and serve immediately
