Ingredients
- 3-4 lbs. chuck roast
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1 teaspoon sea salt
- 1/2 cup beef broth
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup onion, chopped
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the chuck roast and brown on all sides.
- In a small bowl, mix together the garlic, oregano, basil, thyme, garlic powder, onion powder, chili powder, paprika, black pepper, and sea salt.
- Sprinkle the seasoning mixture over the chuck roast and rub it in to ensure the spices stick.
- Place the chuck roast in the slow cooker and add the beef broth.
- Add the carrots, celery, and onion to the slow cooker.
- Cover the slow cooker and cook on low heat for 8-10 hours.
- Once the chuck roast is cooked through, remove from the slow cooker and let rest for 10 minutes before slicing and serving.
