Ingredients

  • 3-4 lbs. chuck roast
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • 1/2 cup beef broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onion, chopped

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chuck roast and brown on all sides.
  2. In a small bowl, mix together the garlic, oregano, basil, thyme, garlic powder, onion powder, chili powder, paprika, black pepper, and sea salt.
  3. Sprinkle the seasoning mixture over the chuck roast and rub it in to ensure the spices stick.
  4. Place the chuck roast in the slow cooker and add the beef broth.
  5. Add the carrots, celery, and onion to the slow cooker.
  6. Cover the slow cooker and cook on low heat for 8-10 hours.
  7. Once the chuck roast is cooked through, remove from the slow cooker and let rest for 10 minutes before slicing and serving.
