Ingredients

  • 4 ounces semi-sweet chocolate, chopped
  • 1/2 cup heavy whipping cream
  • 2 eggs, separated
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons sugar

Directions

  1. In a medium saucepan, heat the cream over medium heat until it just begins to simmer. Remove from the heat and add the chopped chocolate. Stir until the chocolate is melted and the mixture is smooth.
  2. In a medium bowl, beat the egg whites with an electric mixer until they become foamy. Add the cream of tartar and continue to beat until soft peaks form. Gradually add the sugar and continue to beat until the egg whites form stiff peaks.
  3. Add the egg yolks to the chocolate mixture and stir until combined. Gently fold in the egg whites, a third at a time, until the mixture is light and airy.
  4. Divide the mousse among four small dishes and refrigerate for at least 30 minutes, or until the mousse is set.
