Ingredients

  • 1/2 cup jicama, peeled and diced
  • 1/2 cup watermelon, diced
  • 1/2 cup cantaloupe, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1 jalapeno, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Directions

  1. In a medium bowl, combine jicama, watermelon, cantaloupe, and red onion.
  2. In a small bowl, whisk together lime juice, orange juice, jalapeno, cilantro, salt, and pepper.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Chill for 10 minutes before serving.
