Ingredients
- 1 large potato
- 2 tablespoons vegan butter
- 1/4 cup vegan cream cheese
- 1/4 cup vegan cheese of choice
- 1/4 cup chopped green onion
- Salt and pepper to taste
Directions
- Preheat oven to 400°F (200°C).
- Scrub the potato and dry it. Pierce it several times with a knife or fork.
- Bake in the preheated oven for 40-45 minutes, or until tender.
- Cut the potato in half and scoop out the insides into a bowl, leaving the skin intact.
- Add the vegan butter, cream cheese, vegan cheese, green onion, salt and pepper, and mash together.
- Spoon the mixture back into the potato skins and bake in the preheated oven for 10 minutes.
- Serve warm.
