1 large potato
2 tablespoons vegan butter
1/4 cup vegan cream cheese
1/4 cup vegan cheese of choice
1/4 cup chopped green onion

Directions
Preheat oven to 400°F (200°C).
Scrub the potato and dry it. Pierce it several times with a knife or fork.
Bake in the preheated oven for 40-45 minutes, or until tender.
Cut the potato in half and scoop out the insides into a bowl, leaving the skin intact.
Add the vegan butter, cream cheese, vegan cheese, green onion, salt and pepper, and mash together.
Spoon the mixture back into the potato skins and bake in the preheated oven for 10 minutes.
Serve warm.
