Ingredients

  • 1/2 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and halved
  • 2 tablespoons fresh parsley, chopped

Directions

  1. In a medium bowl, whisk together the olive oil, vinegar, mustard, honey, salt, and pepper.
  2. Add the red onion, bell peppers, tomatoes, olives, and parsley and stir to combine.
  3. Cover and refrigerate for at least 1 hour before serving.
  4. Serve cold or at room temperature.
