Ingredients
- 1/2 cup (115 g) butter
- 1/2 cup (100 g) light brown sugar
- 3 tablespoons golden syrup
- 1/2 teaspoon vanilla extract
- 1 cup (125 g) all-purpose flour
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
Directions
- Preheat the oven to 350°F (180°C). Grease a baking sheet with butter or non-stick cooking spray.
- In a medium saucepan, melt the butter over low heat. Add the sugar, golden syrup, and vanilla extract. Stir until the sugar is dissolved and the mixture is smooth.
- Remove the saucepan from the heat and stir in the flour, ginger, and cinnamon. Mix until everything is well combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet, using about 2 tablespoons of batter for each basket. Leave at least 1 inch (2.5 cm) between each basket.
- Bake for 10-12 minutes, or until the edges are golden brown. Remove the baking sheet from the oven and let the brandy snap baskets cool for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, the brandy snap baskets can be filled with your favorite filling and served.
