In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
In a large bowl, combine sugar, salt, melted butter, eggs and yeast mixture. Mix in the flour, 1 cup at a time, until a soft dough forms.
Turn dough out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
Punch the dough down. On a lightly floured surface, roll the dough out into a large rectangle. Spread the walnuts and honey over the dough. Roll the dough up like a jelly roll. Place the dough in a greased 9x13 inch baking pan.
Preheat oven to 350 degrees F (175 degrees C). Bake the Potica for 30 to 40 minutes, or until golden brown.
Brush the top of the Potica with melted butter and cool before serving.
