Ingredients
- 1 medium bitter melon
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 4 cups chicken broth
Directions
- Cut the bitter melon in half lengthwise and scoop out the seeds. Slice the halves into thin slices.
- In a large saucepan, heat the oil over medium heat and add the garlic. Fry for 1 minute or until fragrant.
- Add the sliced bitter melon and fry for 2-3 minutes, stirring occasionally.
- Add the chicken broth and salt and bring to a boil. Reduce the heat and simmer for 15 minutes.
- Ladle the soup into individual bowls and serve warm.
