Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (4 ounces) diced green chilies
  • 1/2 cup frozen corn
  • 1/2 cup chopped fresh cilantro

Directions

  1. Place chicken in the slow cooker.
  2. In a small bowl, mix together chili powder, garlic powder, onion powder, cumin, salt, and pepper. Sprinkle over chicken.
  3. Add in rice, chicken broth, tomatoes, green chilies, corn, and cilantro. Stir to combine.
  4. Cover and cook on low for 5-6 hours, or until chicken is cooked through and rice is tender.
