Ingredients

  • 1 lb. flank steak
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • 3 cups tortilla chips
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1 jalapeno, seeded and diced
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro
  • Sour cream, for topping

Directions

  1. Preheat the oven to 375 degrees F.
  2. In a small bowl, combine the olive oil, chili powder, garlic powder, onion powder, cumin, salt, and pepper. Rub the mixture onto the steak and set aside.
  3. Arrange the tortilla chips on a baking sheet. Top with the steak, red onion, bell pepper, jalapeno, and cheese. Bake for 15-20 minutes, or until the cheese is melted and the steak is cooked to your liking.
  4. Remove from the oven and top with salsa, cilantro, and a dollop of sour cream. Serve immediately.
