Ingredients

  • 1 tablespoon olive oil
  • 1 onion, sliced into thin strips
  • 1 red bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 4 ounces mushrooms, sliced
  • 1 pound lean beef, thinly sliced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 8-12 small flour tortillas

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onions, bell peppers, and mushrooms and cook for 3-4 minutes, stirring occasionally.
  3. Add the beef and cook for 5-6 minutes, stirring occasionally.
  4. Add the cumin, oregano, chili powder, salt, and pepper and stir to combine.
  5. Continue to cook for an additional 2-3 minutes, or until the beef is cooked through.
  6. Warm the tortillas in a dry skillet for 1-2 minutes on each side.
  7. Serve the beef mixture on the warm tortillas with your favorite toppings.
