Ingredients
1 tablespoon olive oil
1 onion, sliced into thin strips
1 red bell pepper, sliced into thin strips
1 green bell pepper, sliced into thin strips
4 ounces mushrooms, sliced
1 pound lean beef, thinly sliced
1 teaspoon cumin

1 teaspoon chili powder
Salt and pepper, to taste
8-12 small flour tortillas
Directions
Heat the olive oil in a large skillet over medium-high heat.
Add the onions, bell peppers, and mushrooms and cook for 3-4 minutes, stirring occasionally.
Add the beef and cook for 5-6 minutes, stirring occasionally.
Add the cumin, oregano, chili powder, salt, and pepper and stir to combine.
Continue to cook for an additional 2-3 minutes, or until the beef is cooked through.
Warm the tortillas in a dry skillet for 1-2 minutes on each side.
Serve the beef mixture on the warm tortillas with your favorite toppings.

The word “fajita” is derived from the Spanish word “faja”, which means “belt” or “girdle”.
Traditionally, fajitas are made with skirt steak, but other cuts of beef can also be used.
