Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 carrots, diced
  • 1 red pepper, diced
  • 1 can (15 ounces) pumpkin puree
  • 4 cups vegetable broth
  • 1 can (15 ounces) split peas, rinsed and drained
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
  3. Add the carrots and red pepper and sauté for another 3 minutes.
  4. Add the pumpkin puree, vegetable broth, split peas, cumin, and smoked paprika. Bring to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
  5. Season with salt and pepper to taste. Serve hot.
