Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1/4 teaspoon red pepper flakes
  • 3/4 cup yellow cornmeal
  • 1/2 cup fresh or frozen corn kernels
  • 1/2 cup canned creamed corn
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves
  • 1/4 cup grated cheddar cheese
  • 2 tablespoons chopped green onions

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  2. Add the chicken broth, red pepper flakes, and cornmeal. Simmer, stirring occasionally, until the polenta is thick and creamy, about 10 minutes.
  3. Stir in the corn kernels, creamed corn, Parmesan cheese, heavy cream, salt, and pepper. Cook for an additional 5 minutes.
  4. Remove from the heat and stir in the parsley. Transfer to a serving bowl and top with the cheddar cheese and green onions.
  5. Serve the polenta warm.
