Ingredients

  • 2 cups of couscous
  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can of diced tomatoes
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of turmeric
  • 1 teaspoon of coriander
  • 1 teaspoon of cayenne pepper
  • 1 teaspoon of salt
  • 1 cup of vegetable broth
  • 1/2 cup of frozen peas
  • 1/2 cup of chopped parsley

Directions

  1. In a large saucepan over medium heat, heat the olive oil and add the onion and garlic. Cook for 5 minutes, stirring occasionally.
  2. Add the zucchini, bell pepper, and tomatoes and cook for another 5 minutes.
  3. Add the spices and stir. Cook for 1 minute.
  4. Add the couscous, vegetable broth, and salt. Bring to a boil, reduce heat, and simmer for 10 minutes.
  5. Stir in the frozen peas and parsley. Cook for another 5 minutes until the couscous is tender.
  6. Serve hot and enjoy!
