Ingredients
2 cups of couscous
1 tablespoon of olive oil
1 onion, diced
2 cloves of garlic, minced
1 zucchini, diced
1 bell pepper, diced
1 can of diced tomatoes
1 teaspoon of paprika
1 teaspoon of cumin
1 teaspoon of turmeric
1 teaspoon of coriander
1 teaspoon of cayenne pepper
1 teaspoon of salt
1 cup of vegetable broth

Directions
In a large saucepan over medium heat, heat the olive oil and add the onion and garlic. Cook for 5 minutes, stirring occasionally.
Add the zucchini, bell pepper, and tomatoes and cook for another 5 minutes.
Add the spices and stir. Cook for 1 minute.
Add the couscous, vegetable broth, and salt. Bring to a boil, reduce heat, and simmer for 10 minutes.
Stir in the frozen peas and parsley. Cook for another 5 minutes until the couscous is tender.
Serve hot and enjoy!
