Ingredients
1 cup mashed ripe banana (about 2 medium bananas)
1 cup grated zucchini
1/2 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup rolled oats
1/4 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
Directions
Preheat oven to 350°F (175°C). Grease 12 muffin cups* or line with paper liners.
In a large bowl, combine banana, zucchini, oil, eggs, and vanilla extract. Stir until well blended.
In a separate bowl, whisk together flour, oats, sugar, baking soda, cinnamon, and salt. Add to banana mixture and stir until just blended.
Divide batter evenly among prepared muffin cups. Bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Remove from oven and let cool for a few minutes before transferring to a wire rack to cool completely.
