Ingredients

  • 2 cups vegetable broth
  • 2 cups cucumber, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup celery, diced
  • 1/2 cup red onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper

Directions

  1. In a blender or food processor, combine the vegetable broth, cucumber, bell peppers, celery, onion, garlic, cilantro, parsley, mint, olive oil, vinegar, salt, and pepper.
  2. Blend until the mixture is smooth and creamy.
  3. Transfer the soup to a large bowl and chill for at least an hour in the refrigerator.
  4. Serve chilled.
