Ingredients

  • 1 pound Italian sausage (mild or hot, your choice)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups dried lentils, rinsed
  • 4 cups chicken or vegetable broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. In a large skillet, cook sausage, onion, garlic, oregano, and basil over medium heat until sausage is cooked through, about 10 minutes. Drain any excess fat.
  2. Transfer the sausage mixture to a slow cooker and add the lentils, broth, tomatoes, salt, and pepper. Stir to combine.
  3. Cover and cook on low for 6-8 hours, or until the lentils are tender.
  4. Serve hot.
