1 pound Italian sausage (mild or hot, your choice)
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
2 cups dried lentils, rinsed
4 cups chicken or vegetable broth
1 can (14.5 ounces) diced tomatoes, undrained
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
In a large skillet, cook sausage, onion, garlic, oregano, and basil over medium heat until sausage is cooked through, about 10 minutes. Drain any excess fat.
Transfer the sausage mixture to a slow cooker and add the lentils, broth, tomatoes, salt, and pepper. Stir to combine.
Cover and cook on low for 6-8 hours, or until the lentils are tender.
Serve hot.
