Aaku Pappu Dal with Greens

Ingredients

  • 1 cup aaku (field beans)
  • 1 cup pappu (lentils)
  • 2 cups chopped greens (spinach, kale, or collards)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric
  • 2 tablespoons oil
  • Salt to taste

Directions

  1. Soak the aaku and pappu overnight in water.
  2. Drain the water and rinse the beans and lentils. Add them to a pot with 1 cup of water and bring to a boil.
  3. Once it comes to a boil, turn the heat down to low and simmer for 15 minutes.
  4. Meanwhile, heat the oil in a pan over medium heat. Add the cumin and mustard seeds and let them sizzle for 1 minute.
  5. Add the chopped greens, turmeric and salt to the pan and stir to combine.
  6. Add the greens mixture to the pot of dal and stir to combine.
  7. Cover the pot and let it simmer for an additional 10 minutes.
  8. Once the dal is cooked, turn off the heat and serve hot.
