Ingredients
4 chicken breasts, skinless and boneless
2 tablespoons olive oil
2 cloves garlic, minced
1 onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 cup mushrooms, chopped
1/2 cup white wine
1 cup heavy cream
2 tablespoons butter
1/4 cup fresh parsley, chopped
1 teaspoon dried thyme

Directions
In a large bowl, combine the olive oil, garlic, onion, bell peppers, mushrooms, white wine, and herbs. Add the chicken breasts and toss to coat.
Heat a large skillet over medium-high heat and add the chicken and marinade. Cook for 8-10 minutes, until chicken is cooked through.
Remove the chicken from the skillet and set aside. Add the butter to the skillet and sauté the vegetables for 3-4 minutes, until softened.
Add the heavy cream and bring to a simmer. Cook for 3-4 minutes, until the sauce has thickened.
Return the chicken to the skillet and simmer for 5-7 minutes, until the sauce has reduced and the chicken is cooked through.
Garnish with parsley and serve over rice or mashed potatoes.
