Ingredients

  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup zucchini, shredded
  • 1/2 cup pineapple, chopped

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mix together melted butter, sugar, eggs, and vanilla. Stir in cinnamon, baking soda, salt, and flour. Fold in the zucchini and pineapple.
  3. Pour batter into the prepared pan. Bake for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  4. Let cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
