Ingredients

  • 4 pounds boneless pork shoulder
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup ketchup
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Directions

  1. Place the sliced onion and minced garlic at the bottom of a slow cooker.
  2. In a medium bowl, mix together the ketchup, honey, brown sugar, apple cider vinegar, Dijon mustard, Worcestershire sauce, smoked paprika, salt, black pepper, and cayenne pepper.
  3. Rub the pork shoulder with the BBQ sauce mixture, making sure to coat it well.
  4. Place the coated pork shoulder on top of the onion and garlic in the slow cooker.
  5. Cover the slow cooker and cook on low heat for 8 hours or high heat for 4-6 hours, until the pork is tender and easily shreds with a fork.
  6. When the pork is done cooking, remove it from the slow cooker and shred it using two forks.
  7. Pour the remaining sauce from the slow cooker into a saucepan and bring to a simmer over medium heat.
  8. Simmer the sauce for about 10 minutes, until it thickens and reduces slightly.
  9. Mix the shredded pork with the thickened sauce.
