Ingredients

  • 4 boneless, skinless chicken breasts

  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley, for garnish

Directions

  1. In a shallow dish, combine the flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Transfer the chicken to the slow cooker.
  3. In the same skillet, add the sliced mushrooms and cook until browned and tender, about 5 minutes. Add the Marsala wine and chicken broth, scraping any browned bits from the bottom of the skillet. Bring the mixture to a simmer.

  5. In a small bowl, whisk together the cornstarch and water. Stir the cornstarch mixture and heavy cream into the slow cooker. Cover and cook on high heat for an additional 30 minutes or until the sauce has thickened.
