Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 pounds boneless, skinless chicken breasts, diced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 cups chicken broth
  • 2 cups butternut squash, peeled and diced
  • 1/2 cup heavy cream

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and sauté for 3-4 minutes, until the onion is translucent.
  2. Add the chicken, Italian seasoning, salt, and pepper to the skillet. Cook for 5 minutes, stirring occasionally, until the chicken is cooked through.
  3. Transfer the chicken mixture to the slow cooker and add the chicken broth and butternut squash. Stir to combine.
  4. Cover and cook on low for 4-5 hours, or on high for 2-3 hours, stirring occasionally, until the butternut squash is tender.
  5. Stir in the heavy cream and cook for an additional 10 minutes.
  6. Serve warm.
