Ingredients

  • 3 cups of rhubarb, chopped
  • 1 cup of white sugar
  • 2 tablespoons of all-purpose flour
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt
  • 1/2 cup of butter, melted
  • 1/2 cup of all-purpose flour
  • 1/2 cup of quick-cooking oats
  • 1/2 cup of packed brown sugar
  • 1/4 cup of chopped walnuts
  • 1/2 cup of milk
  • 2 eggs, lightly beaten

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  2. In a medium bowl, mix rhubarb, white sugar, 2 tablespoons of flour, nutmeg, cinnamon and salt. Spoon mixture into the prepared baking dish.
  3. In a medium bowl, mix together melted butter, 1/2 cup flour, oats, brown sugar and walnuts. Sprinkle over rhubarb mixture.
  4. In a medium bowl, mix together milk, eggs and remaining 1/4 cup of white sugar. Pour over the rhubarb mixture.
  5. Bake in preheated oven for 30 minutes, or until the top is golden brown.
