Ingredients

  • 1/3 cup rolled oats
  • 1/3 cup cooked sweet potato
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • Pinch of salt
  • 1 cup milk of choice (dairy or non-dairy)
  • Optional sweetener of choice, to taste
  • Optional toppings, such as nuts or fruit

Directions

  1. In a jar or bowl, combine oats, sweet potato, cinnamon, ginger, and salt.
  2. Pour in milk and stir to combine.
  3. If desired, add sweetener.
  4. Cover and place in the refrigerator overnight.
  5. In the morning, stir the oatmeal and top with desired toppings.
