Ingredients

  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1/2 cup frozen corn kernels
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste

Directions

  1. Combine the rice, chicken broth, bell pepper, onion, corn, black beans, chili powder, and cumin in a large microwave-safe bowl.
  2. Cover the bowl with a lid or plastic wrap and microwave on high for 8 minutes.
  3. Stir the casserole and replace the lid or plastic wrap and microwave for an additional 3-5 minutes, or until the rice is cooked through.
  4. Remove the casserole from the microwave and stir in the cheese, salt, and pepper.
  5. Serve the casserole hot.
