Ingredients

  • 2 cups Fritos corn chips
  • 1/2 cup canned corn
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350°F.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the onion, bell pepper, and garlic. Saute until the vegetables are softened, about 5 minutes.
  4. Add the canned corn, chili powder, cumin, cayenne pepper, salt, and pepper. Stir to combine.
  5. Add the Fritos and stir to coat with the spices. Cook until the chips are slightly toasted, about 5 minutes.
  6. Remove the skillet from the heat and sprinkle with the cheese.
  7. Bake for 8-10 minutes, until the cheese is melted and bubbly.
  8. Serve hot.
