In a large bowl, combine chicken, BBQ sauce, red onion, red pepper, cheddar cheese, cilantro, chili powder, garlic powder, cumin, smoked paprika, salt and pepper. Mix until combined.
In a medium skillet, heat oil over medium heat. Working in batches, add tortillas and cook for 1-2 minutes per side or until golden brown. Remove from heat and transfer to a plate lined with paper towels to absorb any excess oil.
Working one at a time, place a tortilla on a flat surface. Spoon about 1/4 cup of the chicken mixture into the center of the tortilla and roll up into a cylinder shape. Place the flauta seam-side down in a greased baking dish.
Bake for 15 minutes or until golden and crisp. Serve with sour cream, salsa, or guacamole.
