Ingredients
1 can chickpeas, drained and rinsed
1/4 cup olive oil
1/4 cup tahini
2 cloves garlic, minced
1/2 teaspoon ground cumin
2 tablespoons freshly squeezed lemon juice

1/4 teaspoon freshly ground black pepper
1/2 cup diced tomatoes

Directions
Preheat oven to 375 degrees F.
In the bowl of a food processor, combine chickpeas, olive oil, tahini, garlic, cumin, lemon juice, and salt and pepper. Process until smooth.
Spread hummus mixture into an 8x8-inch baking dish.
Sprinkle tomatoes, onion, parsley, and mint over the hummus.
Bake for 15 minutes.
Sprinkle feta cheese over the top and bake for an additional 5 minutes.
Serve hot or at room temperature.
