Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup olive oil
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 1/4 cup crumbled feta cheese

Directions

  1. Preheat oven to 375 degrees F.
  2. In the bowl of a food processor, combine chickpeas, olive oil, tahini, garlic, cumin, lemon juice, and salt and pepper. Process until smooth.
  3. Spread hummus mixture into an 8x8-inch baking dish.
  4. Sprinkle tomatoes, onion, parsley, and mint over the hummus.
  5. Bake for 15 minutes.
  6. Sprinkle feta cheese over the top and bake for an additional 5 minutes.
  7. Serve hot or at room temperature.
