Directions
In a medium bowl, combine the chicken, soy sauce, honey, garlic, and ginger. Stir to coat the chicken and let marinate in the refrigerator for at least 15 minutes.
Heat the oil in a large skillet or wok over medium-high heat. Add the chicken and cook, stirring frequently, until cooked through, about 5 minutes.
Add the bell peppers, onion, and cheddar cheese. Cook, stirring often, until the vegetables are tender and the cheese is melted, about 5 minutes.
