Ingredients
- 4 egg yolks
- 1/2 cup white sugar
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, whisk together egg yolks and white sugar until thick and creamy.
- In a medium saucepan, heat cream until it just begins to bubble. Gradually whisk the hot cream into the egg yolk mixture.
- Stir in the vanilla extract. Divide the mixture among 6 ramekins.
- Place the ramekins in a large baking pan. Fill the pan with enough hot water to come halfway up the sides of the ramekins.
- Bake for 35 minutes in the preheated oven, or until the custards are set.
- Remove ramekins from the baking pan. Cool custards to room temperature, then refrigerate for at least 2 hours.
- Preheat oven broiler.
- Sprinkle 1 tablespoon brown sugar over each custard. Place the ramekins on a baking sheet.
- Broil for 3 minutes, or until the tops are golden brown.
- Allow to cool for at least 10 minutes before serving.
