Ingredients

  • 2 quarts of cold water
  • 1/4 cup of kosher salt
  • 1/4 cup of dark brown sugar
  • 1/4 cup of apple cider vinegar
  • 2 cloves of garlic, minced
  • 1 tablespoon of freshly ground black pepper
  • 2 bay leaves
  • 2-4 pounds of chicken pieces

Directions

  1. In a large bowl or container, combine the cold water, kosher salt, dark brown sugar, apple cider vinegar, minced garlic, freshly ground black pepper, and bay leaves.
  2. Stir the ingredients until the salt and sugar are completely dissolved.
  3. Add the chicken pieces to the brine and make sure they are completely covered with the brine solution.
  4. Cover the bowl or container and refrigerate for at least 4 hours or overnight.
  5. When ready to cook, remove the chicken from the brine and discard the remaining liquid.
  6. Pat the chicken dry with paper towels and proceed with your recipe.
