The leeks bring a mild, slightly sweet flavor, while the bacon adds a touch of smokiness and the pasta provides a comforting base. This dish is quick and easy to make, making it an ideal choice for busy weeknights. Serve it with a side salad or garlic bread for a complete meal that everyone will love.

Ingredients

  • 8 ounces of pasta (any shape)
  • 4 slices of bacon, chopped
  • 2 leeks, washed and thinly sliced
  • 3 cloves of garlic, minced
  • 1/2 cup of chicken or vegetable broth
  • 1/2 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
  3. Add the sliced leeks to the skillet and sauté until they are soft and slightly caramelized, about 5 minutes. Add the minced garlic and sauté for another minute.
  4. Pour in the chicken or vegetable broth and bring to a simmer. Cook for 2-3 minutes, allowing the flavors to meld together.
  5. Reduce the heat to low and pour in the heavy cream. Stir to combine. Add the cooked pasta to the skillet and toss until it is well coated with the sauce.
  6. Stir in the grated Parmesan cheese until it melts and becomes creamy. Season with salt and pepper to taste.
  7. Garnish with fresh parsley and the crispy bacon. Serve hot and enjoy!
