Enjoy a creamy and flavorful risotto cooked in the microwave with this easy-to-follow recipe. This dish combines Arborio rice with onions, garlic, white wine, and Parmesan cheese for a satisfying meal. The best part is that it only takes a fraction of the time compared to traditional stovetop risotto. Perfect for busy weeknights or when you want a delicious homemade dish without the extra effort!

Ingredients

  • 1 cup Arborio rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. In a microwave-safe dish, melt the butter on high for 30 seconds.
  2. Add the chopped onion and minced garlic to the dish and cook on high for 2 minutes, or until the onion is translucent.
  3. Stir in the Arborio rice and cook on high for another 2 minutes to toast the grains slightly.
  4. Add the vegetable broth and white wine to the dish. Stir well.
  5. Cover the dish with a microwave-safe plate or lid, leaving a small vent for steam to escape.
  6. Microwave on high for 5 minutes.
  7. Remove the dish from the microwave, stir the risotto, and return it to the microwave for another 5 minutes on high.
  8. After the second 5-minute interval, stir the risotto again and microwave for a final 5 minutes on high or until the rice is tender and the liquid is absorbed.
  9. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  10. Let the risotto rest for a few minutes before serving.
  11. Garnish with chopped fresh parsley and additional Parmesan cheese, if desired.
  12. Serve hot and enjoy!
