Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, cold and cut into cubes
- 1/4 to 1/2 cup ice water
- 8 cups apples, peeled, cored, and sliced
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon butter, melted
- 1 tablespoon milk
- 1 tablespoon granulated sugar
Directions
- In a large mixing bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice water, a tablespoon at a time, while tossing the mixture with a fork. Mix just until the dough comes together. Divide the dough in half, shape each half into a disk, and wrap them in plastic wrap. Refrigerate for at least 1 hour.
- Preheat the oven to 425°F (220°C).
- In a separate bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated.
- Roll out one of the dough disks on a lightly floured surface to fit a 9-inch pie dish. Place the dough in the dish, trimming any excess pastry hanging over the edges.
- Pour the apple filling into the pie dish, spreading it out evenly.
- Roll out the second dough disk and place it on top of the apple filling. Trim the excess dough and crimp the edges to seal.
- Using a sharp knife, make several small slits in the top crust to allow steam to escape during baking.
- In a small bowl, mix together the melted butter and milk. Brush this mixture over the top crust. Sprinkle the granulated sugar on top.
- Place the pie on a baking sheet and bake for 15 minutes. Reduce the oven temperature to 375°F (190°C) and continue baking for an additional 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
- Remove the pie from the oven and let it cool for at least 2 hours before serving.
- Serve warm with a scoop of vanilla ice cream on top.
