Ingredients

  • 2 1/2 cups all-purpose flour

  • 8 cups apples, peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon butter, melted
  • 1 tablespoon milk
  • 1 tablespoon granulated sugar

Directions

  1. In a large mixing bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, a tablespoon at a time, while tossing the mixture with a fork. Mix just until the dough comes together. Divide the dough in half, shape each half into a disk, and wrap them in plastic wrap. Refrigerate for at least 1 hour.
  3. Preheat the oven to 425°F (220°C).
  4. In a separate bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated.
  5. Roll out one of the dough disks on a lightly floured surface to fit a 9-inch pie dish. Place the dough in the dish, trimming any excess pastry hanging over the edges.
  6. Pour the apple filling into the pie dish, spreading it out evenly.
  7. Roll out the second dough disk and place it on top of the apple filling. Trim the excess dough and crimp the edges to seal.
  8. Using a sharp knife, make several small slits in the top crust to allow steam to escape during baking.
  9. In a small bowl, mix together the melted butter and milk. Brush this mixture over the top crust. Sprinkle the granulated sugar on top.
  10. Place the pie on a baking sheet and bake for 15 minutes. Reduce the oven temperature to 375°F (190°C) and continue baking for an additional 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Remove the pie from the oven and let it cool for at least 2 hours before serving.
