Ingredients

  • 4 large red bell peppers
  • 1 cup cooked wild rice
  • 1 cup cooked chicken breast, diced

  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt

  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Directions

  1. Preheat your oven to 375 degrees Fahrenheit. Slice the top off each red pepper and remove the seeds and membranes.
  2. In a large bowl, combine the cooked wild rice, diced chicken breast, onion, celery, carrots, garlic, dried thyme, dried oregano, salt, pepper, Parmesan cheese, and parsley. Mix well to combine all the ingredients.
  3. Stuff each red pepper with the rice and chicken mixture, pressing it down gently to fill the pepper completely.
